Using Caramelized Fish Sauce.

Ever heard of an Aji Crystal pepper? These citrusy, pinapple-y hot peppers play off our toasty Caramelized Fish Sauce in this tangy, spicy, umami-tastic scallion sauce. Comes together in five minutes, and absolutely slaps on top of a rice bowl (and pretty much anything else).


Caramelized Aji Crystal Sauce

Ingredients

4

Aji crystal peppers (or other moderately-hot pepper), minced

1 bunch

Green onion, minced

4 tbsp

Ginger, grated

4 tbsp

Acid League Caramelized Fish Sauce

1/2 cup

Neutral oil (e.g. grapeseed or avocado)


Method

  1. Heat oil on stove over medium-low heat, just enough to wilt green onions.**
  2. Mix all other ingredients and pour warmed oil over top. Let sit for 30 minutes before enjoying.

**to test for correct heat, drizzle a little oil over green onion mixture; you should hear a crackling or sizzling sound.
