Our Innovation Manager Loritta Lin created this perfected take on a simple, classic Caesar using our Luxe Caesar Salad Kit.
The secret sauce (naturally) is the dressing, layered with tons of multifaceted flavor from our garlicky All The Alliums, umami-rich Caramelized Fish Sauce and Worcestershire, bold Rare Citrus Living Vinegar and peppery Arbequina olive oil.
(Of course, the crisp Romaine, freshly-made croutons and loads of Parmigiano don't hurt either.)
Wash and prepare romaine lettuce by tearing or cutting into bite-sized pieces. Set aside.
Heat a cast-iron or non-stick pan on medium, starting with 2 tablespoons of olive oil. Meanwhile, slice baguette about ½ inch thick, on the bias. Once oil is well heated, add the sliced baguette and fry on both sides until golden brown and crunchy. Add more oil as needed. Season with salt and pepper once toasted and remove from pan onto paper towel. Set aside to cool.
To prepare the dressing:
Whisk the egg yolk, 1 tsp All The Alliums, and 1 tsp Rare Citrus until slightly frothy.
Slowly add olive oil while whisking.
Once olive oil is fully incorporated, add Worcestershire, Caramelized Fish Sauce, and remaining ½ tsp Rare Citrus and 1 tsp All The Alliums.
Add grated Parmigiano-Reggiano cheese and mix until combined.
Season with salt and pepper to taste.
To assemble: Toss romaine with caesar dressing until leaves are well-coated. Tear or cut fried bread into bite-sized pieces and add to salad. Finish with grated Parmigiano-Reggiano and serve.
