It’s in this spirit that most of these recipes were concocted—guided by imagination over exact measurement. Our goal is to inspire home cooks to do the same, and we hope readers use these recipes as a starting point instead of a precise rulebook to be followed.

Using Rare Citrus Living Vinegar.

Ever heard of an Aji Crystal pepper? These citrusy, pinapple-y hot peppers play off our toasty Caramelized Fish Sauce in this tangy, spicy, umami-tastic scallion sauce. Comes together in five minutes, and absolutely slaps on top of a rice bowl (and pretty much anything else).


Rare Citrus Dressing

Ingredients

2 tbsp

Grainy mustard

1.5 tbsp

Maple syrup

2.5 tbsp

Acid League Rare Citrus Living Vinegar

2.5 tbsp

Olive oil

Leftover juice from slicing orange

Salt and pepper, to taste


Method

  1. Add a slow drizzle of olive oil while whisking until emulsified. 
  2. Add salt and pepper to taste.

 


Orange Fennel Salad

Ingredients

1 head

Fennel, thinly sliced (reserve fronds)

¼ head

Cabbage, thinly shredded

1

Orange, sliced

1

Avocado, sliced or diced

¼ cup

Salted pistachios or salted marcona almonds


Assembly

  1. Add a slow drizzle of olive oil while whisking until emulsified. 
  2. Add salt and pepper to taste.
