Our Story

From a basement lab to grocery shelves nationwide.

In the spring of 2019, our food scientist founders set their sights on reinventing vinegar for people excited by acidity but bored with the status quo. After experimenting with countless methods and over 500 flavors—everything from roasted coconut to honey nasturtium, Campari, and kombu—we developed a proprietary process that produces complex, concentrated, and consistently delicious vinegars that would become the jumping-off point for dozens of other products over the following years.

Driven by boundless curiosity and a spirit of collaboration, our team has poured countless hours into developing and releasing a vast array of products. Each creation we’ve put out into the world has embodied not only our relentless pursuit of flavor innovation but also the distinctive contributions of every member of our team.

As our reputation for flavor, innovation and creativity grew, so did our product lineup.

Today, we’ve refined our range of acid-based sauces, condiments, dressings, and more.
