Grilled Summer Fruit Salad

Assembly

Step 1
Heat your grill on high, and add the seasoned fruit.

The figs will cook the fastest, in about 2 minutes. Remove the peaches once they get solid char marks on both fleshy sides, about 6 minutes. Remove the zucchini once they've charred and softened, about 8 minutes.

Step 2
Toss everything in the emulsified vinaigrette and garnish before serving!

Note: This was delicious straight off the grill, but you can absolutely leave everything to marinade in the dressing and refrigerate before serving, too!

Ingredients

For the fruit
4 Peaches, quartered
2 Zucchini, cut in 2" Obliques
8-10 Figs, Halved
Toss with a good pinch of salt, a few cracks of pepper, and 3 TBSP olive oil

For the vinaigrette
3 TBSP Strawberry Rosé Living Vinegar
6 TBSP good olive oil
2 tsp dijon or whole grain mustard
2 tsp date syrup (sub honey)
2 grated Garlic cloves
salt & pepper to taste

For garnish
2 oz Goat cheese
1 Sprig tarragon
1 tsp Aleppo
