Smoked Salmon Con Tomate

Yields 3-4 servings

We all know and love pan con tomate, especially when tomatoes are in season. It turns out smoked salmon also works well with grated tomato, almost like a deconstructed sandwich, but better! This dish is fresh, smoky, and great for brunch or as a lovely addition to your light summer dinner.


Assembly

Step 1
Grate and strain the tomatoes. Combine with EVOO and Meyer Lemon Honey Vinegar to taste. Season as needed.

Step 2
Spread grated tomato mixture onto a rimmed plate. Place salmon and cucumber evenly on top. Finish with remaining garnishes as desired. Enjoy with crusty bread or on its own.

Meyer Lemon Honey Living Vinegar

Smoked salmon

Red onion, shaved

Cucumber, thinly sliced

Crème fraîche

Dill

Fried capers

Dill oil
