Soju Jelly with Grated Frozen Peach

Yields 4-6 servings

The combination of shaved ice and jelly is so elite. It’s super common in Asian desserts, and we just love how texturally exciting it can be. We wanted to make a fruity (and boozy) version for the summer, that is refreshing and extra fun for adults! If you want a less boozy or alcohol-free version, you can replace any amount of soju with fruit juice of your choice. You can also other toppings, including other fruits, jellies, or syrups. Play around with it and have fun!


Assembly

Step 1
Wrap ripe peaches tightly in plastic wrap and place in resealable bag or container. Freeze overnight.

Step 2
Pour ¼ cup soju into medium heat-proof bowl. Sprinkle gelatine evenly overtop and let bloom. Set aside.

Step 3
In a small pot, add ½ cup syrup from canned lychees, vinegar, and water. Bring to a boil.

Step 4
Pour hot lychee vinegar mixture into the bowl with soju and gelatine. Stir until gelatine has dissolved, about 1-2 minutes.

Step 5
Add remaining soju, stir, and pour into a wide, rimmed dish or pan. Cover and refrigerate for 2-3 hours or overnight.

Step 6
Slice jelly into cubes or simply scoop out large chunks and place into individual serving dishes. Finish with lychees, grated frozen peach, and condensed milk.

Ingredients

1-2 Peaches, wrapped and frozen

1 (360 mL) bottle Soju (divided) - we used yogurt flavor

1 tbsp Gelatine, unflavored

1 can Lychees in syrup 

1 tbsp Strawberry Rosé Living Vinegar

2 tbsp Water

Condensed milk (garnish)
