Chicken and Rice in Creamy Pho Broth

Yields 2-3 servings

This dish is the quickest way to a cozy meal, coming together in less than 30 minutes (or 10 minutes, if you already have rice cooked and ready to go!). Although adding coconut milk pho broth might seem somewhat sacrilegious, we knew we wanted a broth that was creamy and rich, and the flavors went well together so we thought, why not? 


Assembly

Step 1
Cook jasmine rice in 2 cups of water.

Step 2
In a small pot, combine coconut milk, 1 cup water, and Pho Broth Concentrate. Bring to boil, then reduce to simmer and keep warm until rice is done cooking.

Step 3
To assemble: Place a serving of rice in a bowl and ladle broth around it. Place shredded chicken on top and garnish with herbs and chili oil. Squeeze lime juice on top and enjoy!

1 cup Jasmine rice, uncooked

3 cups Water, divided

¾ cup Unsweetened coconut milk

2 tbsp Pho Broth Concentrate

Rotisserie chicken, shredded

Cilantro

Mint

Scallions, sliced

Chili oil (optional)

Lime wedge
