Creamy Curry Udon

Yields 1-2 servings

A sauce so easy to make but rich and creamy enough to feel luxurious, especially for a simple lunch or dinner. It all comes together in 15 minutes in a single pan, saving other coveted stovetop space for your protein and veg.


Assembly

Step 1
In a medium non-stick frying pan, combine coconut milk, Toasted Coconut Dressing, garlic, ginger, and curry powder. Heat over medium until it starts to simmer.

Step 2
Add udon and simmer gently over medium-low heat until noodles have softened and sauce thickens slightly.

Step 3
Plate and top with green onion, sesame seeds, and an egg yolk. Mix egg yolk into the noodles and enjoy!

Note:
If you only use 1 block of udon, the dish may be a bit more saucy, depending on the size of the noodle block.

¾ cup Coconut milk

1.5 tbsp Toasted Coconut Dressing

1 clove Garlic, grated

1 tsp Ginger, grated

1 tsp Japanese curry powder

1-2 blocks Udon

Green onion (for garnish)

Toasted sesame seeds (for garnish)

1 Egg yolk (optional, for garnish)
