Tuna Melt Loaded Potato

Yields 2-4 servings

If you love tuna melts and loaded baked potatoes, then you will have to try this ultimate mash-up of the two dishes! We loaded up baked potatoes with a spicy tuna salad, then topped it off with a heaping pile of cheese, melted to perfection.


Assembly

Step 1
Preheat oven to 400ºF. Poke holes all over each potato and place onto a baking sheet with a rack. Drizzle with olive oil and rub to coat the potatoes evenly. Bake for at least 1 hour, or until soft enough to pierce a skewer through easily.

Step 2
Meanwhile, prepare tuna salad by combining drained tuna, Spicy Serrano Mayo, red onion, cornichons, Hot Deli Mustard, celery, and lemon juice. Season with salt and black pepper.

Step 3
Once potatoes are done, set oven to broil or to 475ºF. Carefully cut potatoes open, but not all the way through, either in half lengthwise or into quarters. Open and fill both potatoes evenly with tuna salad. Top with shredded cheese and transfer back to oven, until cheese has melted.

Step 4
Top with chives and serve.

Ingredients

2 large Russet potatoes

1-2 tbsp Olive oil

170 g (6 oz) tin of Tuna, drained

¼ cup Spicy Serrano Mayo

1.5 tbsp Red onion, minced

1 tbsp Cornichons, minced

1.5 tsp Hot Deli Mustard

2 tbsp Celery, minced

2 tsp Lemon juice

Salt and black pepper, to taste

1 cup Cheddar cheese, grated

2 tbsp Chives, finely sliced
