Spicy Green Goddess Pasta Salad

Yields 2-4 servings

Do you ever find yourself with a random block of frozen spinach and a ton of partially used bundles of herbs? Maybe half a box of pasta lying around? Well, this recipe might just be for you! This bright green dressing is packed with flavor, and uses our Triple Garlic Shortcut Sauce for ample garlicky goodness, without the hassle of peeling. Add a spoonful (or two) of Calabrian chilies for a little kick! We’ve also provided a modification to the recipe if you want to transform the dressing into a thicker dip consistency, for your veg platters or tortilla chips.


Assembly

Green Goddess Dressing:
Prep fresh herbs and blend. To turn this into a thick dip, use ½ cup of tahini and juice from 1 lemon.

Pasta Salad:
Cook pasta in heavily salted water. Combine all ingredients in a large bowl. Enjoy!

Ingredients

Green Goddess Dressing

¼ cup Fresh mint, chopped

¾ cup Fresh parsley, chopped

½ cup Fresh chives, cut into 1” pieces

3 sprigs Green onion, cut into 1” pieces

¼ cup Tahini

¼ cup Triple Garlic Shortcut Sauce

2 tsp Hot Deli Mustard

1 block Frozen spinach, thawed, pressed

2 Lemons, juiced

¼ cup EVOO

Salt & Pepper to taste

1-2 tbsp Calabrian chilies
depending on desired spice level


Pasta Salad

250 g Pasta of your choice

1/2 Cucumber, seeds removed, sliced

1 cup Snap peas, sliced

⅓ cup Castelvetrano olives, pitted, split in half

1 can Tuna, packed in oil
